Liver
The cod stores its surplus lipid in the liver, which may contain between 40% and 70% lipid on a wet weight basis.
This accounts for more than 18% of the total live weight of the cod. In wild cod, liver indices of 3-8% are normal.

Since Atlantic cod use liver energy depots during starvation and for growing gonads, the size of the liver and its lipid
content varies accordingly.

In Norway cod liver is traditionally processed into industrial fish oil. It is also used for the medicianal product "tran"
due to high content of vitamin A and D. Lately more liver is being canned and exported to Eastern Europe.
The Baltic states and Russia also buy fresh and frozen liver.

 



Milt
Milt is the male gonads of fish.
In Norway, milt is traditionally used in the medical industry for extraction of amino acids.
Today the majority of cod milt is exported to Asia for human consumption.

Before the mature fish starts to spawn the milt is well developed and of commercial value.
On spawning, the milt flows from the body when the fish is subjected to pressure. At this stage the milt has no commercial value

     


Roe
Roe usually refers to the female gonads genitalia of fish.
Before the fish spawns (ripe fish) the roe are well developed and of commercial value.
The general condition of ripe fish is usually excellent.

On spawning, roe and milt flow from the body when the fish is subjected to pressure.
At this stage the roe and the milt are usually too soft to be of commercial value.

Roe caviar are collect mainly from these fish: Salmon, Cod, Capelin, Saithe, Haddock, Ling.
