Hígado
El Bacalao almacena su excedente de lípidos en el hígado, lo que puede llegar a suponer entre el 40% y 70% de lípidos con respecto al peso húmedo del pez; esto se traduciría en más del 18% del total de peso vivo de un ejemplar. En variantes silvestres de Bacalao la relación de 3% a 8% es la habitual.

Eso sí, el Bacalao del Atlántico Norte utiliza sus depósitos de energía en épocas de reproducción y escasez de comida, por lo que el tamaño del hígado y la concentración de lípidos se reducen respectivamente.

En Noruega los hígados de Bacalao tradicionalmente se procesan en derivado de Aceite Industrial. También se utiliza en el fármaco Tran debido a su alto contenido en vitaminas A y D.

En los últimos años se han incrementado los envíos de hígado enlatado a muchos destinos en Europa del Este. Los países bálticos y Rusia adquieren además grandes cantidades de hígado congelado

Milt
Milt is the male gonads of fish.
In Norway milt is traditionally used in the medical industri for extraction of amino acids.
Today the majority of cod milt is exported to Asia for human consumption.

Before the fish starts to spawn (ripe fish) the milt is well developed and of commercial value.
On spawning fish the milt flows from the body when the fish is subjected to pressure. At this stage the milt has no commercial value

Roes
Roe usually refers to the female gonads of fish.
Before the fish starts to spawn (ripe fish) the roes are well developed and of commercial value.
The general condition of ripe fish is usually excellent.

On spawning fish the eggs (roes) and milt flow from the body when the fish is subjected to pressure.
At this stage the roe and the milt are usually too soft to be of commercial value.

Roes caviar collect mainly from this fish: Salmon, Cod, Capelin, Saithe, Haddock, Ling.
